Our organic olive oil comes from a small estate in southern Italy with trees that are hundreds of years old. There, our olive growers carefully hand-pick the organic olives at the peak of ripeness. The olives are then thoroughly cleaned in their small stone mill, gently ground, and pressed. Nothing is added to the oil at any stage of the production process. It is simply cold-pressed; neither the olive paste nor the oil is heated.
